This is an easy to make recipe for rack of pork. Taking advantage of the oven, one can bake together potatoes and baby zucchini with flowers as side dishes.

A complete Sunday dinner in less than one hour and a half? No, it is not difficult to achieve. The following is a recipe for a rack of pork; however, with ingenuity one can do almost any meat of one's choice in the same manner.

When choosing the rack of pork or pork chops, it is recommended to get the ones that has two distinct colours, because the meat is more tender.

Recipe for Rack of Pork

Ingredients

  • Rack of Pork
  • 1 tablespoon Ginger
  • 1 tablespoon Garlic
  • 2 tablespoon Herb mixture of one's choice, fresh or dry
  • 5 Potatoes
  • 2 Zucchini or 4 Baby Zucchini with Flowers
  • Olive oil
  • Salt and Pepper

Directions

  1. Prepare the rack of pork. Rinse the meat and then pat dry with paper towel. Use a sharp knife to separate the bone from the meat, but do not cut the meat out completely. Put salt and pepper all over the rack of pork and rub them in gently. It is recommended to use a meat thermometer; if so, put it in.
  2. Mince the ginger and garlic. It is recommended to use a blender. Then rub the mixture into the crack between the meat and the bones. Use toothpicks or thread to tie the meat again to the bones.
  3. Use herbs of one's choice. A mixture of oregano, thyme, rosemary and tarragon, for example, gives a nice taste. The lemon thyme variety has a pleasant lemony scent which is very refreshing. Rub the mixture all over the meat. Pour oil on top, and rub again gently, leaving as much herbs on the meat as possible.
  4. Preheat the oven to 210C/410F.
  5. Clean the potatoes and slice them, around 1 cm thick. It is not necessary to peel them, but that is a personal choice. Arrange them on a baking sheet and paint them with oil. The best thing to use for preventing them sticking to the sheet and get nicely roasted is a silicon baking mat. This can go directly to the bottom rack of the oven when it is ready.
  6. Prepare the zucchini. If full grown zucchini are used, slice them lengthwise, again at the thickness of around 1 cm. If baby zucchini are used, they can be roasted as they are or sliced in halves. If they come with the zucchini flowers attached, then it is better to leave them whole.   7. When the oven is ready, put the rack of pork in the middle rack.
  8. Let it cook for half an hour and then put the zucchini on the sheet together with the rack of pork. Paint the zucchini with oil, and put the sheet back into the oven.
  9. The meat should be ready around an hour. If a meat thermometre is used, leave it until it reaches the indicator for pork.
  10. Take everything out. The zucchini would be cooked with a nice tan and slightly crispy flowers with an aromatic scent. The potatoes would be crispy and browned. Not to mention the pork, roasted with the fragrant from the herb mixture.
